Hello, As mentioned earlier, cream based soups are cremas. Crema de championes, etc. Sopa de arroz and sopa de pasta are dry soups. Sopa de arroz is usually a mixture of rice cooked with vegetables, usually peas, etc. Sopa de pasta is usually a macaroni or spaghetti dish with meat and tomato flavorings. In no way would we consider either as soups. Yet, sopa de fideos (noodles) usually here in my country turns out to be a real soup allthough the noodles are more nearly a vermicelli or spaghetti than a noodle. Caldo, as mentioned earlier is usually a broth type of brew. Clear, clear with vegetables, clear with meat and vegetables, etc, but usually predominantly a broth. Caldo de res which is available all over Mexico can vary from a thin stew to a very thin stew or a broth with scant pieces of res and vegetables. Caldo de camerones or a caldo de mariscos or a Caldo de pescado can be the same; anywhere from a very thin mixture to a more or less thick mixture, but predominantly a broth. Depending upon thickness we often hear where I am Sopa de Mariscos, Sopa de Verduras. But for some reason it is always Caldo de Camerones no matter how thick. So, don't worrry about anything except sopa de arroz and sopa de pasta. Anything else will be more or less soupy. These two will be dry. Adios. Jerezano.
