In Mexico, more than any other place in Latin America, the diminutive seems to be very popular (ito, ita, itos, itas). I think it is to be polite, especially when requesting something.
Any opinions as to why it is so popular, and reasons for using?

I don't know the origin of the widespread use of the diminutive in Mexico, but I do know that its main use is to show affection and friendliness; I'm not so sure that it is used to be more polite.

Of course it is for affection, mothers use it almost exclusively with their children, especially little ones
