Hwy 180 is fine. No big hills, not much congestion as long as you bypass Tampico and Veracruz.
Veracruz State roads are in poor condition, so you have to drive extra carefully.
Hwy 185 is windy when you get over on the Pacific side. Then the road between Salina Cruz and Huatulco is very slow because of tight curves. The police run gun trucks on that stretch, supposedly because of robberies.
My own choice would be to go through Oaxaca because it's a good place to stop for a few days. The downside is that the hill down to Pochutla is steep and curvy. There's another road that goes more directly to Puerto Escondido that is said to be much worse, but I haven't driven it.
I've seen Green Angels on Hwy 180 but can't actually remember seeing them on the other roads.
