In San Cristobal, Chiapas there is a great restaurant called " Salsa Verde" I would decribe it as Mexican diner food . Everything is grilled and the short order cooks do everything with flair. One of their specalties is beef( or pork ) chopped into small pieces with green pepper, onions and Canadian style bacon. Just as this being finished on the grill it is topped with cheese and sort of steamed. They of course use lots of oil. The beef is marinated in some sort of pineapple concoction. Moy sabrosa. Variations of the above substitute smoked pork chops for the beef. Does any one know what this food is called. I think I can duplicate the recipe but would like to give it a name. THanks

Around my part of the country (Morelia), we call that combination "asados" or "alambres." And you specify which ingredients you'd like mixed together. Some of them really aren't that greasy, depending upon the cook. And you can always specify "no oil," which about half the customers do.

In Mazatlan, at "Tacos de Martin" they serve up a similar dish called "Brocheta". It's chopped carne asada with chiles, onions and topped with cheese. The table is loaded with condiments, the 1/2 order is 28 pesos and served with a small cup of bean soup and all the flour tortillas you want. I make my own "burros" out of the dish combined with all the condiments. It's a hungry man portion with the full order plenty for two. It's a great place about three blocks towards the mountains from the Fishermans Monument (called "mono biches" in Maz slang)
