I don't have any Mexican farming friends, growing these particular crops, at least as far as am aware. However a little research about the crops in question have yielded the following information, which may be of some relevance. I started by looking for information about cold-resistant strains of marijuana, as this characteristic might led to crops being able to survive this historic western Mexican cold-snap. Yes, indeed there are plants bred for this survival trait especially the indicas, orginally from the Hindu-Kush area where plants needed to survive harsh weather conditions. Indicas went to South America especially Columbia, further refined for in the highlands and then back to breeders in Mexico(and beyond). Leaving out for the moment, the sativas or low-land strains of indicas. Still following? If Sinaloan growers have selected genetically improved pot plants for: 1)year-round cultivation for example like the two months required for harvest of 'Columbia' strains as compared to twice annual former harvesting 2)growing strains that can be 'cut-down' for harvest or conversely 'eradication' by chop and burn or heavy-duty pesticides but stay alive in the roots Then it would seem these two traits; frequent planting and harvesting, and root regeneration might enable this particular agri-business to survive a period of severe cold better than other more conventional cash crops like corn, tomatoes etc. Besides growing in caves, warehouse extensive cultivation can be assisted by hydroponics, cloning techniques for high production, feminization etc. And if the breeding has also concentrated on potency, it's said that a great harvest can be obtained now for a foot-ball size field than former hundreds of acres. Leading to many smaller, harder to find operations all over. That's the yield from an hour of digging...:) There's probably more to it than this information.
