Anywhere - It is a comal, preferable clay. That is what folks that grow coffee still use, and what there ancestors used. The hardware stores also sell a metal mill with a crank handle that looks like a modified sauage grinder. This is the best thing for taking off the thin shell that is on the coffee bean after the "cherrie" is off. Set the blades more open so as not to damage the green beans and off with the cascara. Then you roast (actually toast) the beans. You could really do this in your frying pan, or any pan (as any Mexican would do without a hesitation), but the comal is more official. It the same as toasting any seed really. Anyone that uses this method and is near a source of coffee growers should be able to make his own coffee for a cost of 10 cents American for a kilo (2.2 lbs) - which is the price that the coffee growers get for the coffee in this state. One could just go ahead and pay $8/lb. or more for designer coffee in a high end shoppe (higher BS level) and feel better about knowing he had contributed more to the world of coffee, but be assured that the coffee grower did not get a penny more. A sorry state of affairs.
