Wedding Photography in Mexico of Americans

I do wedding photography in the United States. During the winter months where I live in the States, there is not a lot of demand for wedding photograpy because it is too cold. I would like to stay in Mexico near Cancun and do wedding photograpy "for americans" that are getting married in Mexico. Once the wedding dates are determined (via emails and internet in the U.S.) I would travel to Mexico and stay for about 2 months and take wedding photos for the americans in mexico. I could probaly do a total of 4 to 8 weddings during this time. Once the weddings are done I would provide the photos to the bride and groom and collect final payment. The payment routine would consist of a depsoit paid to either paypal or a credit card processing bank in the U.S. the second payment would usually be payal/credit card or a check (from the american to me) probably paid the day of the wedding (in Mexico), then a final payment would be made once the photos are delivered. Again this last payment would take place over the internet to a U.S. Bank credit card clearing house. A portion of the "work" would be done in the States (before any of the wedding days) while I am making plans and arrangements, scheduling and taking payments. A larger portion of the work would be done in Mexico on each of the wedding days. Then some follow up would be done by me back in the states when I send final prints or do any follow up printing. My question is this. What do I need in order to do this? Most of the work (but not all) takes place in Mexico. Payment will probably never make it through a Mexican Bank of any sort. I am not trying to "get away" with anything or do anything illegal, I am actually trying to figure this out BEFORE I jump in too far and find out I went about it the wrong way. Do I need to form a Mexican Corporation and get an FM3 and if so, any idea how I would file income tax? U.S. or Mexico. Any suggestions would be great.
