Hola, Rocky! First of all, don't bother flying to Merida. The bus is air conditioned, efficient, clean and direct....and inexpensive. In four hours, where you can sleep or watch a few videos on the 'inflight' TV, and you'll be there! The hotel La Mision de Fray Diego is lovely. My mother always stays there. The rooms have all the expected amenities of an American Hotel. It is a renovated place and has a very nice pool. The restaurant there isn't usually very busy but don't let that fool you. The food is good. The location leaves a little to be desired...it's very noisy right outside (though you wont hear any of that in the hotel). But its close to downtown. You could also try the Hotel Mediomundo (much less expensive, smaller pool and they only serve breakfast. But its also very lovely...more of a retreat atmosphere. The rooms have no phones or TV...on purpose...and its much more personal service). As for good restaurants in Merida: Pan e Vino - Italian restaurant right downtown. Fresh pasta, great capuccino, great Tbone steak Peregrino's - International cuisine I guess you'd call it. The best pork chops (chuletas) in Merida. Other things not so good...but if you like pork chops, you won't find better. on 57th between 62 and 60. Nice interior garden. Pancho's - on 59 between 62 and 60. A bit of a touristy place and expensive, but great food. Barlovento - corner of 61 and 64. open for lunch and til 8 pm. usually not busy, but don't let that fool you either. GREAT shrimp ceviche and their fettucine with chipotle sauce is to die for! Bella Epoca - 2nd story restaurant on 60....has little balconies to eat on. Looks very touristy....but happens to have good food. Great Panuchos (local food) at a good price.
