To say nothing of fine French bread and pastries and some memorable Italian coffee and good, if not great, wines. San Cristóbal de Las Casas is a neat small and beautiful colonial city in many ways if often a bit raw-edged at its altitude with winds bowing in off the southern gulf. But, here is something you may not know. Many people in the Jovel Valley and its surrounds lack plumbing and defecate here and there in convenient fields as they find convenient and when the spring comes and the warm breezes flow there is a component in the fresh air that is neither seen nor detected but can make you sicker than you ever imagined. That would be bacteria laden, invisible, fecal dust borne upon the breeze and entering your nose and threatening your health simply because you are breathing just to stay alive and how is that for an environmntal hazard so leave there before the warm spring winds threaten your respiratory function and head for Juarez or Detroit where your demise will be rapid and unpainful if, perhaps, undignified.

All that having been said, Chiapas is a magnificent place so come on down, yáll.

Would that hold true for intestinal gases as well? Filtration under-garments a new industry? A ban on beans and cabbage? You may have dine al fresco or get take-out for those Cheese Whoppers.

If intestinal gases were toxic then damn near everyone riding to the fourth floor of the Palacio Federal on Avenida Alcalde in downtown Guadalajara just up from the cathedral where the INM offices for El Rancho Grande are located would have long ago been asphixiated from lifts overloaded with gaseous supplicants begging forgiveness for not having been born in such otherwise unworthy places as Ixtlahuacan de Membrillos rather than Cedar Rapids.

I told my gardener this morning that I was once again off to Guadalajara to face INM functionaries and his response to me in Spanish, loosely translated by Dawg was, "Ah yes; the mushrooms. Popping up here and there at random with no discernable purpose." Well put.
