I always enjoy the articles on food (and where to find good places to eat!) thank for posting.

Pambasos must be my absolute, hands down favorite street food. Love. Although, the article mentioned them soaked in a guajillo sauce and then dried - I have always seen them prepared (and when I prepare them at home) by a quick dip of day old telera into the guajillo sauce, then fried either a dry comal or one with lard/oil. I know things vary everywhere you go, but was just wondering if I should try a new way at home and if I am missing out on this method of prep?

I think "dried" is an error or typo.

"En Boca Cerrada No Entran Moscas."

Food has a vocabulary specific to a country, or even a región, or even a city. Tortillas are not the same everywhere, nor are papas or patatas, nor are tomates or jitomates. Explanatory text and a philological explanation would really help a lot of people.
