Does anyone know where I can buy very good quality fabrics and/or Mexican-made lace to use for sewing projects? I expect that this would be somewhere in or around Guadalajara, since, as far as I know, there isn't any place for this in the Lakeside area.

Yes, it will have to be in Guadalajara, in a neigborhood called "Santa Tere" you will find everything that you need , this place is close to Guadalajara downtown, it is safe altought it is very crowded....

As of last summer, there were at least two small fabric (Telas?) stores in Ajijic and one larger one in Chapala. One day Judy King drove my wife and me into Guadalajara and showed Patty one whole street of fabric stores.......I think it was Chapultepec. They had everything from the simplest cotton manta to $200US a yard bridal gown material.
