Bubba´s BBQ & Bistro, Riberas

Well, OK, I threw in "bistro" because it sounded good but this is really about some of the stuff Bubba does besides BBQ, fried chicken and other Texas "high" cuisine. Went there yesterday for some pulled-pork sammiches and cole slaw to go and picked up some special order jars of pickled jalapeños custom made for Dawg which were modified from Bubba´s usual pickled jalapeños in that the concoction includes extra garlic and each jar has a large habanero chile it it to, shall we say, liven things up and while I love Bubba´s standard pickled jalapeños and highly recommend them, this special Dawg reserve was great and on the spicy side as I had requested. These are a special order for Dawg but if you like your pickled peppers on the picante side, I just want you to know Bubba will take special orders and a special order is well worth it. He also has a couple of jars of the jalapeño/habanero combination left since I ran out of money so maybe he´ll sell you those.

While I was there, I also bought up his supply of bread & butter style pickled sliced jalapeños which are truly outstanding if you like that sort of thing as does Dawg.

As an aside, the special jalapeño/habanero pickled peppers came about because one day when I was buying up a supply of Bubba´s pickled jalapeños, Bubba remarked that I should not fret as they were not really hot which I think is his standard disclaimer to his down-home Texas clientele who might object to too much assertiveness in their pickled chiles. I dared him to even try to pickle some jalapeños too picante for Dawg and he accepted the challenge. The result was these great pickled jalapeños with the extra garlic and habanero. Highly recommended if you think no jalapeño is worth its escabeche if you do not break out into a sweat. Otherwise, he always has his standard jalapeños which are greatas well.

I'll have to try some. I tend to like things quite picante and finding anything the least bit spicy in this town is a challenge. We like his BBQ sauce. Even the "medium" has a nice kick to it, or at least the batch we bought from a couple of months ago did. Just checked and the jar in the refrigerator is almost empty. Might have to make a run to glamorous Riberas sooner rather than later. I like his products better than his restaurant, for sure.

P.S. Try the Carne en su Jugo at Jose's in Chapala. Exterior of the Mercado on the south side. Tasty.

I´ll tell you what, Tashby; Bubba´s Special Hound Dog Reserve Pickled Jalapeños with Habanero and Extra Garlic is, to say the least, a "bit spicy". Fine stuff. Worth a visit to the Redneck Riberas Del Pilar AKA St. Tropez Sur Sump. Bubba may be confused in some respects but his pickled chiles are high class redneck cuisine so good that Dawg has decided to make Bubba an honorary Alabamian without his having to actually go there which is more than Dawg could request of any sane person.
