I cannot say that I am familiar with any, but I walked past one in Xalapa the other day.

There is a formal cooking school for younger students near the "Barrio de Xalitic" on Tesalonia street. Also the Universidad Anahuac and the Universidad Veracruzana have majors in cooking. There are classes and courses given sporadically by Rebecca Torres of the Churreria de mis recuerdos. If you can get a group together(8 or 10 participants), I would be glad to set up a gastromic tour of this area.

Thank you very much for your prompt reply. My wife and I are contemplating visiting the Xalapa area this summer. She always tries to fit in some instruction relative to the cooking of the area she visits. Often, the instruction is very informal. We wouldn't be with a group, it would only be the two of us and possibly our adult daughter.
