Half & Half as it is sold in the US is not usually found in Mexico. What you can find is Media Crema in small boxes, usually near the evaporated and condensed milk in large supermarkets, WalMarts, etc. This will be a little thicker than the US version, we usually thin it a little with milk. If you want fresh, then get fresh crema and thin it with milk to your liking. Chocolate made in Mexico is different in taste and consistency than US or European chocolate. A chocolatier in Guatemala explained it to me that there is a final 'finishing' stage that is generally not done in C.A. or Mexico. So, it's coarser and doesn't melt as smoothly. Chocolate in Mexico also often has sugar and cinnamon already in it. European baking chocolate can be found in most high end supermarkets and specialty stores. It's probably better to buy that for baking. I like the taste of Mexican chocolate candy but if you don't, excellent European candy is available.
