Cooking classes

I'd like to get a group together to take a Mexican cooking lesson or two from Virginie Sophie PAUTRAT, an excellent teacher who I took two cooking classes with in connection with the Univ of Guanajuato in June. In June during the two classes we cooked: MACHACA DE CAMARÓN (shrimp cooked with onion, tomato, a chile pepper and garlic served with tortillas), ENSALADA DE NOPALES, GUACAMOLE, ENFRIJOLADAS and SOPA CREMA FRÍA DE CHILE POBLANO Y ALMENDRAS. She grew up in Paris and lives now with her husband in Gto. She also caters. The cooking classes are in her beautiful home in Gto a short bus ride from Mercado Hidalgo. She will give classes in English. I would like to have her show us how to make paella and perhaps a "poor person's" version also, stuffed poblanos with nogales sauce, how in general to make stuffed poblanos with a variety of ingredients and perhaps flan. Other people will have other ideas. If you want to cook other dishes let me know and I will pass your suggestions on to Virginie. She has suggested also Mexican dishes wth rice in counterpoint to the paella which is Spanish which could be interesting. I've attached her price schedule. If we could get a group together I think it would be a lot of fun to cook with Virginie. I'm posting this because I want to cook some more with Virginie and the university does not sponsor cooking groups except in the summer. I'm not getting any recompense from her or the university for putting together a group. I would also like to meet other expats who enjoy cooking and eating good food. If interested please send me a private message and we will put a group together. Payment will be due the first session payable directly to Virginie.

Milt, what is the currency of the price list--pesos, dollars, Euros?
