Chicken Stock

Has anyone found anyplace in the San Miguel area that sells liquid chicken stock? I do a lot of cajun cooking so I use a bunch of it but all I can find is the powder or the cubes which is really salty. I try to make my own whenever I can but I don't always have the time.

If you are looking for chicken broth in a can or box ..it is available very rarely but you never know. I think I have gotten it at Superama in Queretaro once. The chicken bouillon is salty but does add lots of flavor..keep looking..Let us know if you find it.

Thanks, I'll try there. Yes, the chicken bouillon does add a lot of flavor but when you need 10 quarts of chicken stock for a recipe and you use that, your food tastes like a salt lick!

If you have access to a WalMart, Soriana, CostCo, Chedraui... I've found boxed chicken broth in all of those.

I've never been able to find it at the Costco in Queretaro, but I haven't tried the WalMart. Thanks!

The best chicken stock in the world is homemade! It's really easy. Whenever we have a roast chicken, I throw that carcass in a large pasta pot (I don't own a stockpot, but probably should) and simply boil it for a few hours while we watch TV. One carcass makes alot of stock.

I throw some ice in it to cool or let it sit for an hour or so, then pour it into Ziplocs sandwich bags and snack bags (the little ones) then put those into large freezer bags and throw them in the freezer. It's already perfectly portioned and ready to go whenever I need it. It's easy and the best stock you'll ever have! You can put herbs in it too while it cooks if you want. I use it regularly and wouldn't think of buying it these days and the price of the chicken pays for itself in that I don't need to buy stock.

What is the price of chicken now in Mexico? It is so cheap here in Arkansas it is scary. Less than $1.00 a pound for whole chickens and $.29 to $.39 a pound for legs and thighs in 10 pound packages.

At Ley this past Thursday I bought chicken thighs at 31.90K. This was in Navojoa, Sonora where in this part of Sonora Gov. Bours family are large chicken producers (Bachoco brand). Food is not cheap in this part of MX.

I, like Cynthia, live NOB, so we get our chicken pretty cheap. However, I buy the already roasted ones at the grocery store for about $5-$6, so it's not nearly as cheap as a uncooked one, but very handy.

I'd be interested to know what a whole chicken goes for in Mexico. Even so, one carcass makes so much stock, about 2 gallons, that it may still be worth it. What does stock sell for when you can find it?

NOB...I just bought Kroger brand chicken stock in a can for $.50. It was on special..I think it sells for $.89. . I bought Sanderson whole chickens on special for $.55 a pound. They were two days from due to sell date so were moving them along. They are usually $.99.

Recently I bought a whole roasted chicken at Soriana for 43.90. It seemed somewhat smaller than the Sams/Costco stateside but tasty. Considering we get two good meals plus enough left over for a couple of chicken salad sandwiches I think the price is a bargain. And then as you say boil all the bones, skin for broth. I have not seen canned broth in the stores here. I use Knorr Caldo de Pollo powder. Yes, I know it is salty but just remember one needs to skip the salt otherwise or use far less.

For those of us who have dogs -- the bones and scraps left from the stock are much appreciated by Fido. The twice cooked bones are soft enough to be safe.

I buy pollo al carbon for $65 pesos, includes a fair sized chicken, fresh tortillas, and choice of one pint of 'sopa' -- beans whole or refried, spicy boiled patotes, and two kinds of pasta to choose from.

Between Thriftqueen and Rolly I say we have consensus on a great use of one roast chicken! Like you, we get a good dinner meal with enough left for lunch plus excellent broth AND dog bones. It sounds like Rolly has quite the deal going there!

Talk about a great practice of using every bit.
