Have not found it a Wallmart, Superama or Gigante. Maybe it's just not used much by Mexican cooks. There are not a lot of Americans here - a few hundred I've heard in Queretaro.

In the Morelia Wal-Mart Super Center, it's called "Azucar Mascabado Legítmo", in bags as Esperanza has described. It's quite a bit coarser than the brown sugar NOB, but it works. I used it 50-50 with white sugar this AM to make some Peanut Butter Cookies.

If you had molasses, you could add some to white sugar, voilá, brown sugar. The trick is first finding molasses.
A molasses-like liquid, although not as viscous as the real thing, can be made by slowly boiling 6-8 or so piloncillos in a liter or so of water, until they dissolve and the desired viscosity is achieved.

You made peanut butter cookies? Sounds good. I don't make cookies often because I could eat all of them. But here's another lime something for you since we can find great mushrooms here. I got inspired by a TV show but changed it to suite my taste:

Mushrooms in Lime-Cream
1 lb button mushrooms, cleaned
1 T olive oil in a large saute pan, heated
Add whole mushrooms in almost one layer- do not disturb. Allow to brown completely on one side. Then flip and brown other side.
Add
1/8 tsp salt or less depending on your preference
2 T unsalted butter
2 med garlic cloves, minced
the juice of two limes
1/2 tsp thyme or Herbs de Provence, dried
Taste - if it needs more flavor, add 1/4 c white wine
Toss well and reduce til it looks like liquid is going away
Remove from burner and add
3 T crema
freshly ground pepper

I'm serving it with meatloaf, new potatoes and salad tonight.

That would be exactly it.

If you're looking for brown sugar in a box marked 'dark' or 'light', the way it's found in the States, you won't find it. Azúcar Mascabado Legítimo is what to look for, in the sugar aisle at Wal-Mart.

They need warning labels, on the order of "No nos hacemos responsables para tú gordeza." (I know if I got the Spanish wrong, some friendly soul will correct it.)

(I also make about 30 large, white, soft and fluffy Potato rolls, and one loaf of Potato Bread. No brown sugar was harmed in its making.)

Neither is Mexican, that's why they aren't here.
The peanut butter cookie recipe was from the Fanny Farmer Baking book, by Marian Cunningham; with a little sesame and flaxseed added by me.

The potato roll recipe is one of my (a-HEM!) "signature" recipes. But, it's pretty easy.

Now here are some points for SMA. We have the Green Giant "mushroom factory" outside of town - on the road to Rodriguez. On Saturday morning one can go out and buy beautiful white mushrooms. Years ago, there was a huge greenhouse on the same road that had French tea roses. You could go and buy 24" roses and 36" roses for a song..very inexpensive. We could not go into the greenhouses to see the roses but bought them in a shed on the road. One day the green house was torched..seems they were growing other things than roses, packing the boxes with roses and other plants, shipping them to Dallas in refrigerated trucks. It was lovely while it lasted. The roses.. that is. Green Giant only cultivates mushrooms for eating.
