Lime pie as substitute for tarte au citron

I'm on a limon kick. I adapted a recipe from a great French cookbook/cooking course. I've missed the lemon tarts like those served all over France and I got out the recipe and used limons. I must say, limons are more powerful and I did use more sugar. Between the shortcrust and the filling, it wasn't too tart but I have modified the recipe to be just right. There's quite a few steps if you make the crust but the filling is easy. So here is:

Tart de Limon

1 shortcrust with 1 tsp sugar (write me if you want the recipe for that)
Four limons grated
1/2 c + 1 T freshly squeezed limon juice
4 eggs + 3 egg yolks
3/4 c sugar
4 T crema/creme fraiche
1 T melted butter

Blend all in a blender and pour into a pre-baked pie crust. Bake at 350 for about 30 mins or until center is set. Can dust with powdered sugar.

Did you use key limes or Persian limes? I like that very ordinary lemon or lime pie using Eagle Brand Milk and graham cracker pie crust. I have had guests almost fight over it. It is kind of addictive.

How do you make the one with Eagle Brand? That sounds good too. Mexican limes, which Zoe probably uses as will I, are similar to Key limes.

Mix can of Eagle Brand sweetened condensed milk with 3 egg yolks and half a cup of lemon or lime juice. Pour into graham cracker or vanilla wafer pie crust. Bake 325 for 30-35 minutes. Let cool 1 hour. Put in refrigerator for 3 hours. Top with Whipped cream or whipped topping before serving. I thought the little limons were key limes. The larger deep green limes were persian limes??

That's an easy and excellent recipe. I make flan as well with Eaglebrand. And the graham cracker crust is easy,too. I used the small limes, the key limes. Once I learned how to use that hand juicer, I've been juicing limes a lot.

After a great deal of experimentation, we think that we have figured out that the use of the small Mexican Key Limes is what makes the Margaritas taste so much better in Mexico. We always thought it was the Tequila and other liquor ingredients but it appears to be the limes.

My crust is really easy. I buy them at Walmart..2 to a package. Open package and fill with filling. There was a margarita recipe posted on mexconnect one time that was supossed to be the very best. Anyone remember or can find it.???

Not easily finding graham crackers (and I prefer not to use those ready made GC crusts) I've considered making a crackermeal crust by food processing some sweetish, Ritz-like crackers, and going from there.

The OP Zoeq recipe is the real deal, though. I will try that before long.

I made a 'graham cracker crust' out of those hard orange cookies that are in all the stores in Mexico, I can't remember the name now. It came out pretty good.

Don't forget the ever-present oreos or their copies. That makes a mean pie crust. Or crushed almonds with a bit of butter, flour and sugar. Personally, I learned to make pie crust long ago and I don't want to forget how. I love a good pie crust and I just haven't found good crust here. Today, apple pie, the kind with the double crust and sugar sparkling on the top.

Two of my Mexican lady friends use Maria cookies for crust. They tast very similar to our graham cracker crust. Here is a great tasting dessert one brought me recently. I asked for the recipe and I am copying it exactly as she wrote it.

1 Lechera
1 Carnation Clavel
1 Nestle (crema)
6 to 8 Limones
1 lata coktel de fruta
3 paquetes galletas Maria

Mix leches and limones in the blender. Layer whole Marias in pyrex dish, then pour part of milk mixture over. Hers had 3 layers of cookies & milk mixture. She then topped with frutas (which I could do without). But it makes a tasty dessert.

I'm not sure what lechera is, but I'll look it up. That sounds very quick and good. Just to let you know, I did make the apple pie but had so many interruptions, I left out the cinnamon. Our workers seemed to like it, but my husband knew better and said so.

Picky, Picky, let's not split hairs, especially in the cocina. I sent it exactly as she wrote it. As you know they drop those La's. Zoe, LA Lechera comes in different size cans. The Clavel is also canned.
