A nice everyday dish: Pollo Pepsi

I made an easy recipe for chicken tonight that turned out really good.

The lady that cuts my hair told me about it... she's from Guatamala and told me that this is a favorite homemade dish there.

1. salt pieces of chicken brown them in a deep fry pan
2. add sliced onion and chopped garlic and cook until limp
3. cut up some dry ancho chiles in strips and add to the pan and cook a bit
4. add diced tomatos and cook a bit
5. add a can of pepsi

Continue cooking down until it's a nice saucy chicken. Salt al gusto.

I served this with mashed potatos and tortillas and it was wonderful.

A tiny bit sweet, but not too noticable... but the ancho chiles do a good job to cut the sweetness. I used about 5 big ones cut into thin strips. I also used a dice of 4 big garlic cloves, 1 big white sliced onion, about 6 diced roma tomatoes and a good amount of salt.

Here's another very similar recipe that my comadre in Zacatecas uses that has no sweetness at all in it: Brown the chicken and add the sliced onion, garlic, and tomatoes exactly like in the pepsi recipe. But instead of ancho chile use cut up jalepenos, and instead of pepsi add in a bottle of dark beer (I use Negra Modelo).

Reminds me of that well known Southern dish, Baked Ham with Co-cola Glaze.
And I posted this before Bubba!

I heard of a trained chef here who left his employers for another post elsewhere because they asked him to marinate a pork roast in Fanta Orange.

My understanding is that Coca Cola or Fanta Orange are the secret ingredients in various salsas for cocteles de mariscos.

If you put soft drinks in my food, well, I don't want to know about it.

The chicken is probably as good or better with Coke as Pepsi but as everyone from our generation knows:

With one Pepsi, then, you can make twice as much chicken as one Coc-ola..

heh-heh... well ok. To tell the truth the recipe was really Coca-Pollo but since I'm from Chicago I automatically substitute Pepsi for Coke. Can't help it. I do the same thing with Miracle Whip which I grew up believing was mayonaise until I moved to California.

Well, it would sure be a lot sweeter with Pepsi. I gag on the Pepsi sweetness. Isn't Hugh Hefner from Chicago as well, he is never without a Pepsi in one hand. I won't touch the Mir**cle W*** thing, yuck!

I am however still pondering pork roast marinated in orange Fanta. Or perhaps in this new orange soda, Stars and Stripes, made in Puebla.



It sounds pretty good.

ok.. orange is vrery sweet. I suggest this:

chicken!
sauted until nice and browned and add some (second thought a lot of) onions and a bit of butter
then.... orange (hold on... open your mind now... ) JUICE

ok now remojar some toasted guajillos

put the guallijos in the liquador with
1. a tomato roasted
2. a garlic clove
3. some MILK
salt al gusto

Pass this through a sieve into the chicken pan

simmer suave suave until just right, but careful not to let it cook too long

chicken a l'orange con chile guajillo

I like it!

Yesterday, I learned from the young Mexican woman who is staying with us that Pollo Pepsi o de Coca is her mother's recipe, and our amiga was sworn to secrecy. There are few secrets held sacred in the days of the Internet.

I've eaten Pollo a la Coca in fondas all over Mexico. Last time I had it, I was watching the cook as she prepared it for the following day, in a huge cazuela--with a couple of two-liter bottles of Co-cola. She was laughing when I mentioned that some folks think it is a secret recipe. It's enormously popular.
