The Lazy Days of Summer in Mazatlan

Can't Post | Private Reply
Summer is still in full force down our way. I got real lazy in the kitchen and ordered a pizza from Bambinos Pizza. In the Centro, their number is 985-6262

They only speak Spanish but if you know your own address and a few simple words, they'll figure it out.

The Pizza Familiar is about 16" in diameter and comes with two ingredientes. I got the chorizo doble.

Total price: 60 pesos which includes a 10 peso tip. I also had the guy on the motorcylce take a quick trip back down the hill to Gerrados Super and bring me back a Ballena of Pacifico. I gave him 10 pesos to do that. The Ballena cost me 13.50 pesos.

Does life get any better?

That sounds perfect. There is another Pizza Place that we used to really like in el Centro Historico called Extreme Pizza at 982-2021. I am not sure they better the price that you got though. You did great, complete with Ballena.

My lazy (impromptu) summer afternoon consisted of a friend dropping by with a bottle of WARM champagne for a little celebration, complete with some crackers, goat cheese, tasty salami, and thankfully ICE. We quickly devised an ice bucket and got to chillin out! It really can't get much better, now that you mention it, though it could rain just a bit more to cool things off at the end of each remaining summer day.

I wouldn't mind calling for a pizza one of these hot nights, and yes I can tell them my address, but I want Italian sausage on mine! How do I say that without getting the usual salchicha, sliced hot dogs? Or should I stick with the Villa Italia and go pick it up? Dee

Well Dee, I'd like a little Italian sausage and maybe even a pesto pizza but here, I think we are stuck with generic weenies etc. I did get an expensive pizza from Dominoes that had smoked salmon and it was delish but it cost an arm and a leg. Let me know if you find anything exotic from Bambinos.

Uncle Jack’s Country Pork Sausage

Ingredients:
2 ½ lbs finely ground pork (3/16” plate) 2 lbs lean pork 1/2 lb pork fat
2 tsp salt
1 tsp ground black pepper
1 Tbsp brown sugar
2 tsp dried sage
¼ tsp dried marjoram
¼ tsp allspice
¼ tsp nutmeg
1 pinch ground cloves
½ tsp crushed red pepper flakes (or more if you like it spicy)
½ cup white wine

Directions:

1 In a small, bowl, combine the sage, salt, ground black, pepper, marjoram, brown sugar, crushed red pepper, allspice, nutmeg and cloves. Mix well.

2 Place the pork in a large bowl and sprinkle the mixed spices over it. Mix well with your hands. Add wine and mix again.

3 Fry small test patty, taste and adjust spices if necessary. Let stand in refrigerator for at least 1/2 hour to let the flavors marry.

4 Divide into four equal portions and seal in airtight zip lock bags. Will keep 3 days max in refrigerator or up to 6 months in freezer.

About the wine.....the wine and salt together help keep things sanitary during the mixing process. If you don't like the taste of the wine, throw in a shot or two of vodka instead. The booze will cook off and leave no taste at all.

Uncle Jack’s Italian Pork Sausage (Hot)

Ingredients:

2 ½ lbs finely ground pork (3/16” plate)* 2 lbs lean pork 1/2 lb pork fat
1 ½ tsp salt
1 tsp fresh coarse ground black pepper
1 Tbsp brown sugar
3 tsp fennel seed
1 tsp anise seed
1 + tsp powdered garlic
2 tsp coriander
½ + tsp crushed red pepper flakes (or more if you like it spicy)
½ Cup red wine

Directions:

1 In a small, bowl, combine the salt, ground black, pepper, brown sugar, fennel, anise, garlic, coriander, and crushed red pepper. Mix well.

2 Place the pork in a large bowl and sprinkle the mixed spices over it. Mix well with your hands. Add wine and mix again.

3 Fry small test patty, taste and adjust spices if necessary. Let stand in refrigerator for at least 1/2 hour to let the flavors marry.

4 Divide into four equal portions and seal in airtight zip lock bags or stuff into links. Will keep 3 days max in refrigerator or up to 6 months in freezer.

* Note: Some people prefer a coarser texture for their Italian sausage particularly if they are stuffing it into casings. You may want to use a ¼ inch or larger plate.

About the wine.....the wine and salt together help keep things sanitary during the mixing process. If you don't like the taste of the wine, throw in a shot or two of vodka instead. The booze will cook off and leave no taste at all.

Thanks, UJ. You have given me an idea. I can order a cheese and mushroom pizza from Esteban's source, and add my own Italian sausage and some sauteed peppers. Yum!

Dee,
The pizza expert in our house says that you can ask for pepperoni or salami and that is what you should get on your pizza, since the words are the same in Spanish.

I like peperoni and salame too. But not as much as Italian sausage! And chorizo? Well, I love chorizo, Esteban, but not on my pizza, any more than I want Hawaiian style with ham and pineapple, or pesto and chicken. All those are things I love, but not on my pizza. My absolutely favorite pizza will have Italian sausage, roasted red peppers, grilled eggplant, mushrooms and black olives and lots of mozzarrella and parmesan. Once when I felt a real pizza need, I went to Villa Italia and ordered the vegetarian pizza with Italian sausage! It was great! (They have a wood-fire brick oven). Are you hungry? Dee
