Spinach recipes?

Tried Bubba's spinach recipe that he wrote out on another forum and I've copied here below.

Probably wouldn't make it with smooth peanut butter as the crunchy bits of peanuts was a pleasant contrast to the texture and flavor of the cooked spinach.

Anyone got any other spinach recipes...I've got rows of the stuff!

A whole mess of spinach
A couple of tablespoons of peanut butter (preferably crunchy)
A bit of unsweetened coconut milk, say maybe 1/3rd cup
Garlic to taste
Crushed red pepper
Olive or palm oil

Lightly brown the sliced garlic and red pepper in the oil and then throw in the spinach and salt to taste and cook stirring occasionally until the spinach has wilted properly and is almost done (careful not to burn the garlic). Add the unsweetened coconut milk and peanut butter and blend and cook a bit longer until you have a thick and tasty concoction that is not at all watery.

You can probably do this with turnip greens or collards or kale or chard as well.

If you haven't tried palm oil, you have missed something really good that adds its own flavor much as lard adds an important flavor component to many Mexican dishes but the stuff is extremely high in cholesterol so you might want to throw 1/2 a Lipitor into the mix if you use palm oil.

It's hard to beat that old southern spinach salad - fresh spinach, hard boiled egg- chopped. chopped crisp bacon, onion, tomato. Before cholesterol we took the warm bacon grease, put vinegar and sugar in it and poured it over the spinach. Now that would be unthinkable. If you will google spinach recipes you will find plenty.

I have been making a lot of spinach salad recently as well, but here is a spring/summer version of salad I make in the winter with blood oranges. No exact amounts here, I just make enough for whoever is coming for dinner.

Summer Spinach Salad
Spinach (preferably baby spinach)
vinagrette (3 parts oil to 1 part vinegar)
walnuts toasted
blue cheese
sliced strawberries or peaches

Toss spinach with the vinagrette. Add walnuts, a small amount of blue cheese and the sliced fruit. Easy & delicious!

One of my favorite sites is www.recipesource.com. I typed "spinach" in their search slot, and 669 recipes appeared. Yep, waaaaaaaaaaaaay more than I need to know about spinach!

This is my favorite low-carb meal- you will have to figure out how much fresh spinach equals the frozen. Hope you enjoy it. Easy Cheesy Spinach Brunch
1# Jimmy Dean Hot Sausage
1-10oz pkg frozen chopped spinach- defrosted & moisture squeezed out
1-16oz-carton cottage cheese
6-eggs beaten
1-8oz (2 cups) pkg. of shredded Mexican Blend cheese
1/2 C. green onions chopped (add some of the green tops)
1- 4oz. pkg. crumbled feta cheese (I use the tomato/basil)

Cook and drain the sausage and mix
with all ingredients together except feta cheese.
Pour into a greased 9x13 pan.
Sprinkle feta on top and bake for 45 min. at 350.

I presume you liked that West African spinach since you posted the recipe. Now, I wonder if one can find palm oil in Guadalajara. As I said, it's not very good for you but adds a distinct exotic flavor to this dish and other similar West African dishes. If I find some, I'll let you know.

For those of you getting local cable, Discovery Travel & Living at Channel 64 on Telecable has some great programs on various types of international cuisine. Very entertaining with some good recipes on their web site.

Yes, I liked your spinach recipe even minus the palm oil.

Along the Mexican Pacific coast, we often found palm trees with the small nuts from which oil is extracted in old plantations.

Mexican friends would smash the hard outer surface with a rock and munch the nut-meat which is decidely oily and chewy. And share.

Good luck finding some palm oil.

Coconuts are reportedly not native to the Americas but were carried by ocean currents and maybe later by boat.

Coconuts bobbing in the ocean waves resembled 'heads' of people. In Mexico your head can be nicknamed your 'coco'.

Once on the beach in Melaque a friend started screaming when she spied the bobbing head of her drowned five year old daughter.

I ran into the waves and grabbed for...the coconut!

After everyone calmed down, we had a good laugh
The daughter had gone up to our house to bring down more beach toys.

Boy, did she catch it when she got back!

Now this high-cal gal is going to try that other low-cal spinach recipe:)

Here is a spinach recipe from the French side of the Buba family:
dried currants: let them swell in a little bit of warm water and drain them
wash clean and drain spinach and saute them in a little bit of olive oil. Cook them over high heat for a few minutes.
Heat a small amount of olive oil in another panand cook the currants and some pine nuts until golden.
Add the pine nuts, curants and a few drops of orangeflower water and cook for a few seconds.
This is a typical provencal way of cooking spinach different from the African way but delicious as well.
I am not sure if the orangeflower water is available here but since it came to France via Spain and the Moors it may be available somewhere in Mexico. I get it from visiting friends from the US or France and cannot make it here since it is a distilled product and I do not have a still.
