coconut & meat dishes?

I was cooking dinner for me and the kids last night, and as with so much of what I cook, it was an affair that involved looking at what we have, and inventing.

In this case, it was ground beef cooked with a sauce that I made a couple days ago of unidentified "mild chilis" from a bag (tried them as an experiment; they are cheap, but I am not impressed by the results), slightly roasted, with a few cloves of garlic, and onion, and a small can of tomato sauce. I added some garlic and a little salt and let it simmer for about 10 minutes while the pot of barley finished cooking. Then, on impulse, I grabbed a bag of shredded coconut and mixed a small handful of it into the meat and sauce mixture. Mixed the pot of barley in along with some lightly fried and dried corn tortillas that I broke into chips.

It was great. The coconut went surprisingly well with the meat and pepper flavors, adding a very nice flavor texture.

And it caused me to wonder. Down in a land where coconuts are grown and fresh coconut is more readily available, are there any recipes that combine coconut meat with chicken, beef, or pork in some way?
