I added a post last week, after having a bad experience at a Chapala restaurant. It now seems gone. Does anyone ever purge posts from the forum? If so, what criteria are used? Or did something else happen to my post?

Yes, there are unpaid moderators who attempt to keep threads on topic and to make sure they are in keeping with the general guidelines as published at http://www.mexconnected.com/foroguidelines.html.
While I was not responsible for the particular deletion you mention, and don't remember the post you refer to, one point to bear in mind if posting any comment that could be construed as negative about either individuals or businesses is that the legal situation in Mexico (for both the poster, and for Mexico Connect) is very different to the situation in some other countries.
I hope this goes some way towards addressing your concerns,
