OK, so I found "Carne Seca de Res" or dried beef in the Costco store in Guadalajara and it is a specialty of Northern Mexico around Monterrey and Saltillo and ain't sposed to be available here in Jalisco so I bought a bunch to make "Machacado Con Huevo".

It was divine.

Take carne seca de res de Monterrey and fry it up in olive oil or manteca with chopped onions, garlic and serrano chiles and after the vegetables are properly softened and the meat properly browned, add some of that salsa de jitomate you bought for tres pesos down at the local tienda and fry all that stuff together and add in some eggs to scramble in the pot and break out the tortillas and XX Lager and eat the Nuevo Leon equivalent of pulled BBQ a la South Cal'ina.

Damn that's good!
