Buttermilk substitutes

There's a powdered buttermilk substitute available some places which you mix with whole milk and let sit to make what is supposed to be a workable buttermilk. It tasted lousy and didn't make the Irish soda bread Norma attempted get the texture it should. She then used lemon juice in milk and let it sit overnight, as one source recommended, but it still just wasn't the same. Anybody have any other ideas on how to make some version of true buttermilk here?

I take one cup of whole milk and add 1 Tbs. of white vinegar. Some times I substitute sour cream for the buttermilk. I have also had good luck with the powdered kind when used in biscuits. We have discovered Pillsbury frozen biscuits and dinner flaked rolls so I will never make another roll or biscuit. Now if they can perfect southern cornbread. If you can get real buttermilk you can use that to make more buttermilk--use as a starter.
