I am back to teaching full time and mi esposo is learning to be an amo de casa!
He said if I would tell him how, he would have comida prepared each afternoon when I come in. His first--and very successful--meal was thin steaks cooked in a gravy of fresh vegetables.

He quickly browned a large package of steaks at room temperature, the kind used for carne asada. (We buy them on sale all the time at our local Soriana.) He then rough-chopped and sauted 2 large onions, 2 jalapeņos with seeds, 4 cloves of
garlic, and 6 plum tomatoes. AFter the vegatables had cooked down for about twenty minutes, he added the steak and a generous splash of Worchestershire sauce, then covered and simmered for about an hour. He added water from time to time to keep it all from sticking.

He said he worried the entire time about how to make the "gravy". To his amazement, all those wonderful veggies he added made the gravy by themselves!

I made a pot of plain boiled rice when I got home and the results were divine. Now he is expecting one of those tall white hats like Esteban wears whenever he cooks.

He must have been tasting through the whole process and that's where he knew he had it right. Sounds great. Keep it simple, with garlic, onions and chiles you can't go wrong. The plums seemed to be taking a chance but a little fruit sugar sounds tasty. I might have added a little powdered chicken stock to rice but other than that, sounds delicious.

I liked it, especially leaving the chile seeds in. Less prep work. And, it reduces the need to add additional chile chipotle.

With watering mouth.......

I assure you, Rolly, we are already fans of hers! Would that my own kitchen were so well equiped. As is typical of many Mexican homes, my kitchen is tiny and doesn't have cabinets or an oven. On the other hand, my mis-matched shelves are laden with an assortment of cazuelas and ollas which I could not cook without.
