I would like to replace the shower head on my Mexican home, with one I buy in the States. Are the U.S. plumbing sizes (1/2" pipe) compatible with a recently built Mexican standard plumbing?

Absolutely yes. And if not any Mexican worth their meddle 'CAN' make it work!

Push comes to shove and they didn't match, perhaps you could buy one in Mexico?

A US made showerhead will have a federally mandated flow restrictor in it. If the flow rate doesn’t suit you, you can pass a ¼” drill bit through it. The restrictor is usually made of soft white plastic.

Absolutely use one made in Germany! Last a lifetime and you can lift out the water flowscreen at will.
