Who Makes Your Tortillas?

I don't live in Mexico yet. But part of my dream is the smell wafting from the kitchen of fresh, homemade tortillas every morning. Is my dream a total fantasy? Or very real for those of you who live in Mexico? Who makes your tortillas? Let us dreamers know.

Right now, I am the tortilla maker, in the evening not in the morning. But I would much rather be in Mexico smelling them in the open air, or better yet along with one of the delicious meals that my mother-in-law is famous for. She knows just the right amount of different herbs and spices and just the right time to add them. And, just think, she never had the privledge of a single cooking lesson or cookbook of Diane Kennedy. All recipes passed on from generation to generation.

The tortilleria makes mine. Part of the fun is finding the right tortilleria. Hecho a mano cost somewhat more, but they're worth it. For corn tortillas, I go over to Carmen's, sometimes having a repast of quesadillas or sopes, or I trek down to Laura's cocina economica, where the girls make the tortillas out on the sidewalk. There are some great places for flour tortillas, and while I actually prefer flour over corn, they just don't have the charm. I buy my flour tortillas at the abarrote.

I'm not about to make tortillas, and neither is my maid. She's poor and from a humble background, but even she buys tortillas.

One word to the wise: servietas. Only slobs show up at the tortilleria with nothing in hand, expecting to receive their tortillas wrapped in paper. You'll get "the look" if you do. At first, I thought an ironed, clean kitchen towel was sufficient. Nope. So I upgraded to one of my nice Williams Sonoma towels. Nope. Finally, I showed up with a cross-stitched and crocheted servieta, and I got the nod of approval. I decided that the nice embroidered napkin signaled respect for the product.

My mouth is watering... Yes I expect that when you live in Mexico there is no problem obtaining mouth watering tortillas.

To answer my own question, I am right at this minute making my own tortillas (and I don't live in Mexico, yet). I used to make homemade flour tortillas almost every Sunday for many years when our kids were younger. We would have them with homemade beans to make burritoes. Then I fell out of the practice for many years and relied on awful store bought (in the States) tortillas. Now I am back to making my own.

The dough has rested long enough now. It's time to start rolling and grilling.

But I can't wait for the day when I can daily walk to the local tortilleria and buy fresh hand made tortillas for myself in Mexico.

We have an authentic tortillia here in mountain states america...

The flour are spectacular.. they have enough manteca, almost to use for puff pastery,,,Cant sell stuff like that in the stores,,,

Corn are ok but not like the flour....
