The tortilleria makes mine. Part of the fun is finding the right tortilleria. Hecho a mano cost somewhat more, but they're worth it. For corn tortillas, I go over to Carmen's, sometimes having a repast of quesadillas or sopes, or I trek down to Laura's cocina economica, where the girls make the tortillas out on the sidewalk. There are some great places for flour tortillas, and while I actually prefer flour over corn, they just don't have the charm. I buy my flour tortillas at the abarrote. I'm not about to make tortillas, and neither is my maid. She's poor and from a humble background, but even she buys tortillas. One word to the wise: servietas. Only slobs show up at the tortilleria with nothing in hand, expecting to receive their tortillas wrapped in paper. You'll get "the look" if you do. At first, I thought an ironed, clean kitchen towel was sufficient. Nope. So I upgraded to one of my nice Williams Sonoma towels. Nope. Finally, I showed up with a cross-stitched and crocheted servieta, and I got the nod of approval. I decided that the nice embroidered napkin signaled respect for the product.
