Traditional Flour Tortilla Recipe

I am looking for a traditional flour tortilla recipe made with lard. It seems all the recipes I look up on internet have "vegetable oil" and these recipes turn out a more "dry, consistency" to the tortilla than I am used to. I like a more "elastic consistency". I don't know if this is the right way to describe it. But, I believe that the traditional recipe uses lard and this makes a big difference.

I know. Probably not the healthiest recipe for the heart but if I don't eat them everyday I don't think there is much harm in it. :-)

Below is the recipe my wife put together and uses. Has no lard or oil. She never uses those making tortillas. __________________________________________________________________ CORN TORTILLAS

APPROXIMATELY 18 MEDIUM SIZE TORTILLAS.


APPROXIMATELY 30 MINUTES PREPARATION TIME

TORTILLA PREPARATION



1 CUP OF QUAKER ® MASA HARINA dE MAIZ (In Mexico, use Ma Seca)

1/2 CUP REGULAR FLOUR

1 1/4 CUP WARM WATER

Mix dry ingredients. Add water and mix well.

TORTILLA COOKING



TORTILLA PRESS 2 SHEETS OF PLASTIC CUT A LITTLE

LARGER THAN THE CIRCULAR PLATES ON THE TORTILLA PRESS.
[ YOU CAN CUT FROM A PLASTIC GROCERY BAG.]



LARGE FRY PAN OR GRILL




Roll a lump of masa into a small ball about the size of a golf ball. Place a piece of plastic on the bottom tortilla press plate. Place the masa ball on the plastic, in the center of the press plate, and cover with the second plastic sheet. [ This keeps the masa from sticking to the press plate.] Press hard on the tortilla press to form the tortilla. Remove the plastic and place the tortilla half onto your open palm. Gently lay the tortilla on a medium heated fry pan or grill. When masa turns color, approximately 2-3 seconds, turn over. In approximately 2-3 additional seconds, turn again. When tortilla puffs up, remove from the grill.

that's for corn tortillas.

For flour, just substitute the lard for vegetable oil. My mom NEVER measures and always gets it right ;) Just do a little trial and error.

there's A LOT of recipes on the net. a couple of good search engines are GOOGLE.COM and DOGPILE.COM

don't know about the cutting the shortening into small pieces...just scoop it(or the lard in your case) out of the container with your hand and mix it in the flour :) DON'T BE AFRAID TO USE YOUR HANDS!!! :) also, this page has a recipe for sopapillas! mmmm!!!
