Hi,

I've tried to figure out how to make these and have not succeeded thus far. They are crispy, charred and super crunchy and thin. Do you know what they are and how I can make them?

Hi speziak!

Are you referring to the bottom left section within the black box?

To me that looks like just corn tortillas that were left on the comal (or griddle) until they got very crispy and browned. In Mexico we make our own corn chips (or topopos) using day old tortillas that are cut into triangles then deep fried -- a healthier alternative is to bake them instead of frying in oil. The chips in your picture really just looked made on a comal.

If you have old flour tortillas you can do the same or even make them into sweet chips by dusting them with cinnamon and sugar, it's delicious.

I thank you for your answer. So now I need more information :). I've come quite close to making these. I've mixed masa harina and water and made the dough and then rolled these out between two oiled pieces of plastic.
I then transfer them to the oven and bake them.
My problem is that about 1/3 of them is too thick and is very chewy where the rest is really tasty.
How do you make it so thin and then have the ability to peel it off of whatever you are using? THANK YOU!

Use a tortilla press, available at any Mexican market, etc. They will be as thin as you wish, depending upon the amount of pressure you apply to the handle.

You still need to put plastic both under and over the masa, press the torilla on one side, then flip and press the other side, then peel off the plastic. A plastic bag cut open and split works well.
