I would be pretty confident that it would become unattractive to eat (wilted) before it becomes unsafe. I would say that the concern about cilantro potentially making people sick should be focused more on the ‘before’ than the ‘after’ – I wouldn’t serve it without sanitizing it either with colloidal silver drops (Microdyn or a similar product), chlorine solution or vinegar solution, and rinsing it well.
