Enchiladas

an old friend taught me how to make perfect enchiladas (like they taste in texmex restaurants) The way I like them. But I have forgotten how to make them. I know it was very easy sauce and I believe it was a base of butter, beef bouillon, water, etc. The corn tortillas were dipped in the sauce before you rolled them up with cheese and onion. Can someone help me? I may be insulting true mexican food lovers, but I love the ole tex mex taste! Thank you for any help you can give me.

I know what you mean about TexMex. I love TexMex ground beef enchiladas with cheddar cheese and chopped onions on top.
Doesn't mean I don't also enjoy Mexican-style.
