Had a cup of manudo at a local restaurant, the broth wasn't bad but the whole thing taste like ass soup!! How does one know when the stuff is good or does it all have the earthy essence to it??

IMHO menudo is never good. Stick with pozole for a hardy cold weather soup.

It all has the earth essence..
I hate the stuff wether it is French , Spanish , Chinese , Southern or Mexican. Tripes are a big thing in France and my cousin loves them when she came here we ordered menudo one Sunday morning and she hated it..It is an acquired taste.

The only tripe I like is from young goats (cabrito) cooked as Cabrito en su Sangre.

Thanks Rolly and thanks to all. Yep I am from the South and I tried chitlins once and they were a wee bit more earthy than the manudo!! I have had my Grand Ma's fried tripe and it was pretty good, so I figured manudo might be pretty tasty, live and learn!! Everyone have a great New Year and keep trying new things, some of them are pretty good!!
