Green Papaya

Green Papaya fell off my tree the other day and not wanting to toss it I hit the Internet. Almost everything was Asian salad, basically raw and marinated with lots of spices. I ended up making soup with lots of veggies and chicken. Tasted like just another crunchy vegetable.

Any Mexican-ish ideas?

Vietnamese/SE Asian Green Papaya Salad!
You need Vietnamese beef jerky to make this properly, but you can substitite dried, crisped cecina.

And the tool used to shred the papaya is called a Kom Kom Miracle ZigZag.....
