We've often had sliced pickled carrots, but nothing that took long cooking. Pickled carrots are often served as a condiment or relish with tacos al vapor, at least here in Pátzcuaro.
Sometimes pickled carrots are just one of the vegetables in a combination or medley of verduras a la vinagreta, which usually counts onion pieces, cauliflower and chiles in the mix, seasoned with whole spices.
