Carrot Salsa?

I am looking for a recipe that an old girlfriend used to make a long time ago. She used to always call it carrot salsa, but I dont know if that is correct or not. She stated it was her Grandma's recipe from Mexico. All I can remember is that it had a ton of carrots, turned out to be sweet, and it took her all day to make (it was a cooked down recipe). We would have it on a tostada with refried beans and it was DELICIOUS!

I know that isnt much to go off of, but I am hoping this is a more common side dish than I am aware of.

Appreciate any help I could get.

We've often had sliced pickled carrots, but nothing that took long cooking. Pickled carrots are often served as a condiment or relish with tacos al vapor, at least here in Pátzcuaro.

Sometimes pickled carrots are just one of the vegetables in a combination or medley of verduras a la vinagreta, which usually counts onion pieces, cauliflower and chiles in the mix, seasoned with whole spices.

That sounds like a good, maybe even great, salsa. I hope someone can help out with this post.I will ask my wife if she has ever heard of it. To me it is amazing how fast they can whip up great salsas...a type of cooking I am still less than a novice but very intrested in learning.

My wife makes one that is basically cooked carrots pureed with habanero chiles.

The ubiquitous fruta en vinagre served throughout the country. Different cooks will add different ingredients but nearly always will include jalapeños,carrots and onions. My wife adds green papaya chunks.

That is really not a salsa, just pickeled veggies. I love the carrots like you posted, my wife loves them even more.

I didn't call it a salsa. I was replying to Anonimo's post. But then again chopped tomato, onion and green chile is refered as salsa picada or salsa mexicana among other terms.

I appreciate all the responses so far. I know this is tough as vague as my initial description was. I just recall her cooking a LOT of carrots and they would cook down very far and then other items were included.

Hope that may help a bit.

Also, it didnt look like a salsa. It was spreadable, more like a mashed potato consistency if that helps. I believe this is why it cooked so long.

I googled salsa de zanahoria and this one came up. It seems to be Spanish, not Mexican, but sounds a little like what you described. If you don't read Spanish, you can use Google translate, or I can paraphrase it.
