Two years ago I attended the most spectacular wedding and wedding environment I have seen. The wedding party all checked into a hotel in Puerta Vallarta and the afternoon of the wedding, all boarded a boat and traveled 35 minutes or more across the bay to a secluded event location with no hiway access, no electicity but amazing tropical beauty. The location was on a hillside and leaving the boat we wondered along a torch lined trail over a hill and down to the beach, where the ceremony took place. A bar area sat above the site. The ceremony ended about the time it was getting dark and the group went back ovr the torch lit trails to a beautifully set banquet area with candle lit tables and a marlelous buffet dinner. After dinner, back over the hill to a bonfire on the beach and live music , dancing, and candle lit balloons lauched into the air. Shortly after middnight, the entire party wound its way back over the torch lit trails back to the boat and the return to Puerta Vallarta. Sorry I can't tell you the names of the providers of the site but if you PM I can probably check with the mother of the bride and get you the info.
