When I lived in Mexico before I wasn't a vegetarian and didn't look for vegetarian ingredients. Is tofu available? My favorite cream of spinach soup uses it. Thanks!

Sam's Club in México is another that always seems to have tofu, at least here in Mazatlán.

Mexico City: I can choose between individual shelf-stable cardboard packages of soft tofu at the Comercial supermarket, and triple-packs of firm tofu at Costco.

You can buy freshly made tofu at Mercado Toyo in Guadalajara and at Mikasa on San Luis Potosí in Col. Roma, Mexico City.

Good to note, but en lo personal is of mostly theoretical interest to me, since I live out in the boonies. I get to Mikasa about once a year. Great place!

Maesonna, Tofu is so easy to make at home, that no one who wants it should go without! I've made it many times and it always turned out well. PM me, and I'll double-check my recipe and write it down and send it to you. Might be the next day, though. Note: My recipe makes what I would consider to be a "hard" tofu rather than the very soft "soft" tofu. About the consistency of a soft queso fresco.

Yes, I've made tofu at home. A few times, but I am satisfied with bought tofu (which is readily available where I live) so I decided it's not one of the things I want to invest my time on. I do make my own bread and yogurt, on the other hand (sometimes).

What do you use to coagulate it?

The recipe I have calls for vinegar to coagulate the hot soya milk solution. Not where my recipes are right now, so can't tell you the exact amount, but it isn't much.

I'm wondering if you could use a solution of tequesquite to coagulate it. However, it's not something I really want to do.

Anonimo, I doubt that tequesquite would work, as it is a chemical "base" and coagulation needs a chemical "acid". I would think that lime juice would work in place of vinegar, but I've never tried it.
