I have a pork roast of some kind in my freezer and was wondering how I could make it into carnitas...as I scrolled down here came across a recipe for this from Vic, posted in April. Thanks Vic, will have to try it.
By the way, copper is a good metal to cook in because it has a very low specific heat. This means that it takes less energy to heat it up, and gets hot at a lower temperature...at least that's what I tell my chemistry students!H

SEE .... I knew there was another reason for the copper pot !!! (except that this is more scientific huh !!!)
Sorry for the delay in responding H…. So, since you are a chemistry teacher I guess you’re pretty good at following recipes right ? Or is it that you are more of the “ let’s wing it “ type-kind’a - guy/girl ?
BTW, H doesn’t tell much ! I have a couple of friends that like to go by the initial and I got used to call the by D or T or G but this is my very first H ……. It’s cool ….

Sorry I didn't post my name, I usually do, but guess I just hit return when the H popped up under my name instead of scrolling down for Heather (computers are neat, huh!).
Haven't tried your recipe, yet,(my mouth is watering), but it looks like it takes awhile. Was planning to do it on the weekend, but had my daughter's first B-day party! This weekend we're going to visit her Tia, so not then either. Think I'll make carnitas one day next week, we get out early for finals, since it's the last week of school!! Ya-hoo, Cabo, here I come!! Heather
