Now here's an interesting one. Crema de huitlacoche appears on a *Spanish* website (www.afuegolento.com). You folks lucky enough to be in Mexico can get this ingredient, so enjoy!

You don't have to be in Mexico to have access to huitlacoche. If you're anywhere near where sweet corn is grown, look for the silvery-gray fungus that sometimes attaches itself to the ears. Yep, corn smut. That's what huitlacoche is.

In some specialty markets, it's available fresh. And then there's the canned, which works well in soup. Drain and rinse it first.
