-------------------------------------------------------------------------------- COFFEE -------------------------------------------------------------------------------- To brew truly good coffee the most basic point is to pass boiling water through a layer of fresh coffee once and once only. If you want the coffee stronger or weaker, make the layer thicker or thinner respectively. One method is to to pour boiling water over coffee in a filter. Another method is to boil water, add the coffee directly to the water, let steep and strain. The important thing is that the coffee not boil. Taste depends on the grind of the coffee and the way in which it was toasted. Turkish coffee and espresso are fine grinds. American coffee is usually a medium grind. A traditional Mexican favorite, café de olla is made by pouring ground coffee into boiling water, letting it steep, straining and adding cinammon and piloncillo. When making coffee always remember, only make as much as you are going to drink at the moment. Coffee always tastes better when recently made.
