I was just in Xalapa and had a dish called Huevos Tulum. It consisted of fried plantain topped with a corn tortilla, two fried eggs, ham, queso fresco and green peas. In the middle somewhere was a salsa called on the menu, "salsa morita". It was brown, slightly thick, of a creamy consistency. It had the flavor of cloves and perhaps cinnamon and was spicy in a tingly, medium hot way -- not enough to cause tears, just enough to encourage me to take another sip of orange juice.

Anybody got a recipe?

Go to Google (www.google.com) and enter "Salsa Morita", lots of recipies.

Ingredientes:
4 chiles morita
3 dientes de ajo
4 tomates
1 cucharada cafetera de cebolla picada
1/2 taza de queso añejo
sal y pimienta

Procedimiento:
Ase los tomates. Tueste, desvene y remoje los chiles, enseguida muela los chiles con el ajo y los tomates, la sal y la pimienta.

Sirva con la cebolla picada y el queso desmoronado.
