I was recently diagnosed with pancreatitis of "unknown origin" - which means that chiles, tomatoes, beans, and (of all things) beef makes me very sick now. I have looked through Mexican recipes for some time now - preparing to move to Merida from Louisiana - and the very things I cannot eat seem to be staples there. Is there enough of a variety of foods to allow me to eat mostly fruits, green vegetables, and seafood??? Somehow days and days on IV-fluids is not my idea of a good time. Thanks for ANY help you can give me.

I hope you won't think I'm offering platitudes, 'cause I know that pancreatitis is painful, even dangerous, but...when my husband and I go to Mexico, our gastric troubles usually clear up BECAUSE we are eating lots of fresh stuff, unprocessed foods and the like. We eat at the low end of the economic scale (25 pesos for a complete meal with drink and dessert) so that means very small portions of meat. Usually there's a chicken dish, pork or beef to choose from on most comida corridas that we've run across. Rice and corn tortillas. Horchata. All fairly soothing things, I would think.

If you're looking to cook for yourself, the one thing I recommend is getting some drops to put in the water to soak your fruits and veggies in. No need making things worse!
