I recently went to Houston, ate at a little cantina on Richmond Ave. I don't know the name, and I couldn't pronounce it if I did know it! The waitress brought us two samples of non alcoholic iced drinks. One tasted of coconut, one of fruit. I have been searching for recepies for these drinks. I wish I could recall the names of them. Does anyone know a recepie?

what you were drinking (I believe) is called "agua fresca", a generic term for drinks made from fruit, sugar and water. They are really refreshing and easy to make. Basically, take any fruit - lets say strawberries- Wash, and trim the strawberries, mash them well, add water and then sugar to taste and let set for a while in the fridge to completely dissolve the sugar and let the flavor of the fruit thoroughly flavor the water. It depends on the fruit, but for strawberries, you would use about a pound of fruit and two leters of water. It might be more, or less fruit if you were using papaya, mango, guava, etc. You get the picture. I like it less sweet rather than more, but my compadre Luis has his wife Maricela make it with lots of sugar. She tells me it is important not to strain the drink, remove seeds or anything (it gives less flavor), but I have seen that done in restaurants. Hope this helps!
