does anyone know a good recipe for the beef filling in the taco or enchladas like you get in the mexican resturaunts npt store bought mix??

Speaking from the Tex-Mex side, Mexican food made by Mexicans usually uses picadillo or shredded roast beef. The only ground beef usually found around here is in Mexican food made by non-Mexicans. I think that two factors are involved. 1) The cost of ground beef is significantly lower than for roast, and 2) ground beef is more familiar to US consumers (hence Hamburger Helper). But those are just theories...

Needless to say, Taco Bell, Pancho's and others like'em use a pre-mix to season their beef. The secret ingredient that makes it "taco" or "enchilada" instead of "chili" is cumin.

My friend,

I am Mexican and in Mexican cuisine there is not such a thing. I think Jim is right you should probably check a Tex Mex forum or ask the Chihuahua from "Taco Hell" I mean "Taco Bell".

I have lived here for 14 years and have never seen a taco or an enchilada with ground beef in it.

Could it be an invention of Taco Bell? Or Tex-Mex?

I live in East los Angeles, a very "AUTHENTIC folkloric Mexican neighbourhood" Even here there is no use of ground beef for any thing, and there are a lot of mexican restaurants here. Most encheladas are made from chicken or just plain cheese and some choped onion with empasis on creating an excellent sauce.. Most all tacos are made from a variety of grilled or reasted meats, or some simmered in sauces IE-Tinga ,mole ect, so as you can see there is no use of ground meat here ( in the U S) except at the Mexican phone company....Taco Bell

Well, I live in Mexico and this is my recipe. It tastes good and is easy to prepare.

Brown about a pound of ground meat in a skillet. If it is very lean, add a little lard first. When lightly brown, remove from the pan. Then add about 6 plum tomatoes, roughly chopped, a large white onion, also chopped, and a jalapeño pepper. Several cloves of garlic can also be added. When the vegetables are cooked down almost to a paste, put the meat back into the pan. Add a generous tablespoon of tomato sauce, paste, soup or ragu spaghetti sauce. Plus about a cup of water. Sprinkle with cumin or taco seasoning. Cover and cook until all the liquids have been absorbed. Stir often. Sprinkle with a little fresh cilantro before serving. You might want to add a pinch of sugar also during the simmering to soften the acid of the tomatoes.

I usually make a double batch and use the leftovers with extra ragu sauce as a delicious salsa for almost any kind of pasta.

SORRY but there is not such thing as a GROUND BEEF ENCHILADA
the enchilada is made out of shreded beef, chicken or just cheese.
the beef and the chicken are prepared the same way. all the shreded beef or chiken is sautee in a pan with a little onion, garlic salt, pepper, a diced tomato and a diced green chile "tatemado".and then and only then you can stuff your torillas and make a delicius enchilada

i was born and raised in south texas and can tell you that there is plenty of use of ground beef in mexican cuisine...from crispy tacos picadillo (ground beef) to good old ground beef enchilladas.
