marinara sauce-which tomatoes?

I'm finally going to make my grandmother's world famous recipe for marinara sauce, after promissing my wife to do so for years.

we live in Guadalajara and I'm not sure what kind of tomatoes to use-canned (brand preference?) or fresh.

I'd like to give the sauce some chispa-what chile is recommended?
