See if this recipe for stuffed crab gives you any ideas. The mix of tomato, onion, crab and jalapeño peppers sounds good to me. You can skip the jalapeño in your chiles rellenos recipe since the poblano chile will give it enough of a boost. Not sure about the olives -- I would think their flavor would overpower the crab.
