Actually, they tell you to roast the tomatoes, but I don't find that to be necessary. Just tomatoes, onion, chile serrano, a dash of salt, a few drops of water to mix it all together ... yum!

I personally think this simple, uncooked salsa is one of the best. This is what I was served with molletes (bread rolls with cheese and refried beans) for breakfast in Cuernavaca.

easy recipe -
fry red onion and garlic with a bit of cayenne powder, chuck in some red peppers. Once they're soft put in chopped tomatoes, tomato puree, a splash of lime juice, a teaspoon of clear honey, a few choice herbs, salt and pepper to taste, and more cayenne pepper to taste. simmer for a while to make it thicken and let it cool.
