Bistek Tapatio?

Can't Post |

My husband is crazy about a dish called "Bistek Tapatio", served at a local Mexican restaurant. I'd love to learn how to make it for him at home. It seems to be a shell steak with melted monterey jack cheese, peppers & onions... The sauce is hard to describe. It's not especially heavy, and has a spicy, smokey flavor. It's brownish-red. Any recipes? Thanks!

Spicy Grilled Flank Steak With Chile-Lime Sauce
Course : Beef Steak
Serves: 6
Ingredients:

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
sauce
1/2 cup honey
1/4 cup lime juice
3 tablespoons balsamic vinegar
2 tablespoons dijon mustard
1 teaspoon minced canned chipotle chilies in adobo
sauce
1 teaspoon ground cumin
1/4 cup ground allspice
rub
2 tablespoons soy sauce
2 tablespoons pure light olive oil
1 tablespoon minced garlic
1 tablespoon paprika
2 teaspoons dried oregano
1 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 3 pound flank steak
chopped fresh cilantro

Preparation:
To make sauce, combine honey, lime juice, vinegar, mustard, chilies, cumin and allspice in processor and process until smooth. Transfer to bowl. Season to taste with salt and pepper. Prepare barbecue (medium-high heat). Mix soy sauce, olive oil, garlic, paprika, oregano, black pepper and cayenne pepper in small bowl. Rub over both sides of flank steak. Grill steak to desired doneness, about 5 minutes per side for medium-rare. Transfer steak to cutting board. Let rest 5 minutes. Cut steak thinly across the grain. Arrange on platter. Drizzle with sauce then sprinkle with cilantro and serve. Flank steak is especially ideal for company because you don't have to worry about cooking individual steaks for everyone. The rub, or spice mixture, that gets rubbed on the meat gives it lots of flavor, and the sauce adds even more.
