Here is what an egg is good for:

Take some long-grain rice and wash it under lukewarm water until the water runs clear - say, for about ten minutes of vigorous washing. It is important that the rice be washed vigorously enough to assure that the starch has been removed so that the individual grains lack viscosity and, in the final dish, are of the proper texture. Then, parboil that rice for another ten minutes or so. Drain the rice. Place the rice, mounded, in a deep pan in a water/butter mixture of modest amount and cover the pan with its lid plus a sealing of aluminum foil and cook over moderate heat until the water has evaporated and the remaining butter has caramelized and the bottom of the rice has formed a delicious crust.

Take this rice and stir it up and place it in individual serving bowls sufficient to serve your flock. Mound the rice in each bowl and form a well in each bowl of rice. Place a pat of butter in each well and then add the yolk of one egg on top of the butter in each bowl. Sprinkle freshly ground black pepper and aromatic sea salt and sumac on top of that concoction and mix it up.

You have just made a Persian (Iranian) traditional dish known as Chelo that is fit for the gods and a great accompaniment to a variety of lamb barbecues to die for.

That´s what an egg is good for.

I have to try that... Sounds tasty!

Cooking authentic Mexican recipes, be it tacos, Mexican beans, or any dish for that matter, is sure way to put a smile on your guests' face.
